I keep hearing about sprouted grain bread and specifically Ezekiel Bread. I did not know what this bread was and I would like to give it a try. I began researching sprouted grain bread and came across this information. This seems to be a great alternative to regular white or whole wheat bread products. They also make pasta products which I really find interesting. I love pasta however even the whole wheat pasta is not an everyday food to include in a healthy eating plan because of the high carbs. I am going to purchase some bread and pasta to give them a try. I will let you know how I like it. There are some recipes for making the bread however they do seem to contain many uncommon ingredients. It might be more practical to purchase the bread rather than try and locate all the ingredients.
This bread is inspired by the Bible verse Ezekiel 4:9., "Take also unto thee Wheat, and Barley, and beans, and lentils, and millet, and Spelt, and put them in one vessel, and make bread of it..."
Sprouted grain bread has numerous advantages over "enriched" wheat flour breads. These breads are made from the endosperm of the wheat kernel (the inside portion), which contains primarily carbohydrates and few vitamins and minerals. The milling of grain into white flour requires the removal of the bran and the germ. This results in the loss of natural fiber, bran and 22 vitamins and minerals. To compensate, five vitamins and minerals (thiamine, riboflavin, niacin, iron and folic acid) are added back in, "enriching" the flour. Sometimes calcium is added back as well.
Sprouting increases vitamin content. Sprouting neutralizes phytic acid – a substance present in grains – that inhibits absorption of nutrients and more important Sprouting neutralizes or "predigests" if you will, grains through enzymatic activity. The enzymes produced during our natural sprouting process "in effect" breaks down amino acid protein bonds to promote digestibility of the entire grain.
